Way Of Cooking

Chop the onion and fry in preferably sunflower oil. Add chopped peppers. 
After the vegetables are soft, sprinkle with salt and paprika.
Add the tomatoes, cutting them into slices, the grated cheese and chopped parsley.
Mix well and pour the mixture in a baking pan.
Cook in moderate oven (
350-375 °F/180-190 °C).
Shortly before taking the meal out, cover it with a mixture of beaten eggs mixed with yogurt.
Cook in hot oven (
400-450 °F/200-230 °C) until brown.

Ingredients

  • About 1kg of peppers (10-12 peppers)(you can use fresh/frozen/or roasted)
  • 2 - 3 onions
  • 1 tbs. of paprika
  • 4 tomatoes
  • about 200-250 g grated white brined cheese or kashkaval (Bulgarian yellow cheese)
  • chopped parsley
  • salt
  • optional topping: 3 or 4 scrumled eggs mixed with 2 cups of yogurt
