Way Of Cooking
Chop the onion and fry in preferably sunflower oil. Add chopped peppers.
After the vegetables are soft, sprinkle with salt and paprika.
Add the tomatoes, cutting them into slices, the grated cheese and chopped parsley.
Mix well and pour the mixture in a baking pan.
Cook in moderate oven (350-375 °F/180-190 °C).
Shortly before taking the meal out, cover it with a mixture of beaten eggs mixed with yogurt.
Cook in hot oven (400-450 °F/200-230 °C) until brown.
