Chop the onion and fry in preferably sunflower oil. Peppers can also be chopped and added to the onions.
After the vegetables are soft, sprinkle with salt and paprika.
Add the tomatoes, cutting them into slices, the grated cheese and parsley.
Mix well and pour the mixture in a baking pan.
Cook in moderate oven (350-375 °F/180-190 °C).
Shortly before taking the meal out, cover it with the mixture of the beaten eggs mixed with yogurt.
Cook in hot oven (400-450 °F/200-230 °C) until brown.
